Tomato Sauce

Tomato Sauce
processed sugar free
2x400 g tinned tomatoes (preferably organic)
3 tbs apple cider vinegar
1 tsp sea salt
1 tbs mustard (any will do, I used a mix of dijon and wholegrain)
2 tbs preferred sweetener, I use either maple syrup, honey or rapadura sugar
Thermomix Method....
Put all ingredients in the TM bowl, cook on 100/25min/sp2 with MC removed. Place TM basket on lid and put the MC in the basket to keep from jumping around. This lets the steam through with no splattering. After 25 mins, check to see if reduced enough, if not, cook for another 10 mins. Once reduced to liking, replace the MC, hold in place with a tea towel and slowly increase speed to 8, then reduce speed slowly. Let the sauce cool a little before pouring into clean, sealable glass bottles.
Stove Top Method....
Put all ingredients into a saucepan, bring to boil then reduce to a simmer for 30 mins. If not reduced enough, cook for another 10 mins or longer.. Once it's to your liking, pour into your blender or food processor, or place in a jar for a stick blender. Blend until smooth. Let your sauce cool a little before luring into clean, sealable glass bottles.
The sauce will keep in your fridge for about 2 weeks, unless it's summer, then you'll be using it every second day :), then it'll only last 1 week...
