Seed Brittle..
Remember peanut brittle? Yuuummm. Well this is my healthier version. You can mix it up with any sort of seed, such as chia and hemp. I've used pumpkin, sunflower, flax ( all great for different vitamins such as E, B and protein from the pumpkin seeds) and coconut in this recipe. Add in some dried fruits if you like, just be aware that you increase the fructose level doing it, yummy, but not quite as healthy ;)
What you need...
1 cup pumpkin seeds
1 cup sunflower seeds
1/2 cup flax seed (or a mix of flax, hemp, chia)
2 tablespoons coconut oil
3/4 - 1 cup of honey, depending on how sweet you like it.
1/4 tsp sea salt
1/2 tsp cinnamon
What to do...
Heat oven to 180 deg.
Line a tray with baking paper.
Mix all seeds together in a bowl.
Melt the coconut oil and add in the honey to make a runny paste.
Add honey mix to seeds and mix well.
Pour mix onto lined tray and bake for 15-20 minutes until browned. If the honey runs away from the seeds, I just lift up the edges of the baking paper and help it roll back into seeds, you can also mix it all back in halfway through cooking if you like.
Leave to cool and harden on tray, then break into pieces.
