
Raw Caramel Slice...
- egg free, gluten free, dairy free, processed sugar free...
Firstly, place 1 cup of raw cashews in some hot water to soak and soften for 1 hour, rinse once softened. These will be used in the caramel layer.
BASE
- 1 cup (approx 12)dates, chopped
- 1 cup almonds
- 1tsp coconut oil
CARAMEL
- 3/4 cup (approx 8) dates, chopped
- 1/4 cup coconut oil
- 1 tblsp tahini
- 2 tablespoons maple syrup
- 1 cup of presoaked raw cashews
- 1/3 cup water.
Chocolate Top * (see below for options)
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1/4 cup raw cocoa.
*This provides a thin layer, as seen in the photo, if you like a thick chocolate layer, increase the measures to 1/3 of cup for each ingredient.
Once set, remove from freezer & pan. Slice whilst still 'frozen' into little squares. This raw slice is very rich, a small piece goes a long way. Store in your fridge in a sealed container and enjoy when needed.
