Raw Blueberry Cheesecake
So yummy, and pretty easy to make.. You just need to soak the nuts ahead of time. You can substitute macadamias or pecans if cashews don't float your boat.. Equally as yum.. And of course, use different berries if you prefer...
Prep Time:90 minutes
Prep Notes:Pre-Soak 3 cups (approx 450gms) Cashews for 90minutes
Cooking Time:30 minutes
Yields:10 people
Ingredients:
BASE..
160gms Almonds
90 gms desiccated coconut
6 medjool dates (approx 85gms)
pinch sea salt
1/2 tsp vanilla essence
FILLING...
3 cups (approx 450gms) pre-soaked cashews
250gm maple syrup (or honey)
200gm melted coconut oil
juice of 1 1/2 lemons
pinch of sea salt
1/2 tsp vanilla
Directions:
Base.. Line a 20cm springform cake tin. Place all base ingredients into your food processor and process until all come together, it's important to not over process otherwise the nuts will start to release oil and the mix will be runny. Press the base ingredients into your lined cake tin and place int the freezer while you make the filling..
Clean out food processor bowl
Filling.. Place all filling ingredients into your food processor, process until smooth. Pour 2/3 of the filling onto the base and place back in freezer for an hour.. After the hour put 1 1/2cups of blueberries into the remaining filling and process again until smooth. Pour onto the frozen cheesecake and put back in freezer to set for another hour..
Remove from freezer 1/2 hour before serving...
