
Pesto any which way
vegan friendly, nut and dairy free options
Pesto is one of those versatile condiments that is so easy to make and can be added to almost any dish or before dinner yummies that it almost seems senseless not to have some in the fridge. Below is a basic recipe but bear in mind that you can mix up the herbs & added extras, such as coriander, rocket, kale and spinach. If you are fructose free just omit the garlic. If you are nut free take out the pine nuts and add sunflower seeds instead, these give the pesto a nice creamy texture too, or just add extra pepitas (pumpkin seeds). Parsley and garlic are great anti inflammatory foods and pepitas are a fantastic source of magnesium, protein, zinc and potassium which are all needed for healthy digestion and general healthy body functionality . Think outside the pesto box. You don't need cheese to make a great pesto and it doesn't just have to be basil.. Mix it up and let me know what concoctions you come up with.. FYI kale pesto is fantastic....
What you need..
Place all ingredients (except parmesan, if using. Add it in after processing.) into your food processor and blend until smooth. Store in the fridge in a glass jar, topped up with a little extra olive oil. Lasts about 5 days..

- 1 handful peptitas
- 1 handful pine nuts or sunflower seeds if nut free

- 2 cloves crushed garlic (optional)
