Pancakes…gf, nf, df.
My family love these light, fluffy pancakes. Especially with a bit of kefir yogurt & berries. But you can omit the maple syrup and use as wraps too, just keep them wrapped up or in a container so they don't go stale. They're still good the next day & you can easily double the mix.
Ingredients .. makes 8-10 large
1 & 1/4 cup oat flour (120gms). Grind your own in your food processor or store bought.
1/2 cup coconut flour or banana flour (50gm)
2 teaspoons baking powder
1 tsp vanilla extract
6-8 eggs
1 & 1/2 cup milk of choice, personally I like coconut or almond milks, or a mix of both.
1 banana
2 tbls maple syrup (omit if using as savoury or wraps).
1/2 tsp cinnamon
Mix all together. Let sit for 1/2-1 hour if possible.
Cook in a buttered/oiled frypan slowly. Take your time, there's no rush, only if you're hungry.😊.
