Dairy Free Chai Latte

I used to love my soy chai latte's, back in the day when I thought that soy was a far better option than dairy.. Past forward 8 years and many soy latte's, I can no longer have soy without breaking out with a stomach rash and feeling terrible. There are conflicting opinions on soy and whether we should be having it at all. My advice is, if you are having it as part of your diet, and it does have a very high protein count because it contains 8 of the essential amino acids which our body needs, make sure that whether it's as a milk or as a bean, buy the organic, GMO free ones...
There are 2 options below, the first uses medjool dates as the sweetener, the second you can add the dry mix to warmed coconut milk (or milk or choice) and then add a little maple syrup, honey, rice malt syrup.. You don't need much, as the spices are pretty sweet as they are.. I actually double the dry ingredients and store in a glass container to make it easier for next time.. You can make the large batch and store the left overs in a glass bottle in the fridge to reheat for next time or it's just as yummy served cold.
Feeds 4 people : reduce quantities if just for you..
What you need....
The Chai Spice Mix..
3 tsp gnd cinnamon
2 tsp gnd cardamom
2 tsp gnd ginger
1/2 tsp gnd star anise
1 tsp vanilla paste or powder
pinch sea salt
OPTION 1
Food Processor..
1.5-2 cups coconut milk (Ayam brand is great)
1/2 cup water
3 medjool dates, seeded and chopped
3 tsp chai spice mix (or more if you like it strong)
Whizz it all up in your food processor, until the dates are all mooshed up.. Serve as is, with ice blocks or transfer to a small saucepan and warm it up.
OPTION 2
1.5-2 cups coconut milk (Ayam brand is great)
1/2 cup water
1/4 tsp sweetener of choice (honey, maple syrup, rice malt syrup)
Warm the coconut milk and water with 3 tsp of the spice mix and the sweetener. Adjust the spice or sweetness to your liking.
