Crunchy Granola
This is really yummy.. It never lasts very long in my house of growing teenage boys, so I keep making bigger and bigger batches. I've used gluten free oats but you can easily omit these to make it Paleo if that's more your thing.. Play around with other ingredients and nuts of choice, or again, take out the nuts for nut free, just as yummy..
What you need...
1 cup wheat free oats
1 cup shredded coconut
1 cup quinoa flakes
1/2 cup nuts of choice, we love hazelnuts
1/2 cup pepitas
1/2 cup sunflower seeds
2 tablespoon chia seeds
1/2 cup dried cranberries
1/2 cup currants or chopped dates
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
pinch nutmeg
1/2 teaspoon sea salt
1/2 cup melted coconut oil
1/2 cup maple syrup (honey would work just as well)
What to do...
Heat oven to 180 degrees celsius fan forced. Line a large baking tray with baking paper.
Place all ingredients in a large bowl mix around.
Spread mix onto lined tray and place in the warmed oven.
Cook Granola for 10 minutes, turn it over with a spoon then cook for a further 10 or until slightly browned.
Let it cool completely on the tray for at least 1 hour otherwise it will go soggy in storage. As it cools it will crisp up.
Store in a air tight jar.
Enjoy on its own as a snack, with yogurt or choice of milk...
