Coconut Bread
egg, dairy, gluten, nut free
Preheat oven to 175 degrees celsius and line a small loaf tin with baking paper.
1/2 cup sifted coconut flour
zest of 1 lemon
1/2 cup desiccated coconut
3 tbs chia soaked in 9 tbs water for 5 mins (this is your egg replacement)
1 mashed very ripe banana
1 cup coconut yogurt (you can of course put dairy yogurt in)
1 tsp gnd cardamom
1/4 cup maple syrup
1/2 tsp vanilla essence
pinch of sea salt
1 tsp baking powder
1/2 tsp bi-carb soda
Mix the coconut flour, lemon zest and desiccated coconut in a bowl. Stir in the soaked chia, mashed banana, salt, essence, cardamom and bi-carb soda. Add the yogurt and maple syrup and combine.
Spoon into your prepared loaf tin and cook in oven for 35 minutes, cover with foil and bake for another 10 mins. Remove from the oven and cool in tin for 10 mins before turning out onto a cooling rack.
Yummy smothered in any type of butter..
